¼ lbs. Bacon, diced
½ each Carrot, large dice, peeled
½ each Yellow Onion, peeled, large dice
4 stalks Celery, large dice
½ each Green Bell Pepper, large dice
½ each Jalapeno, seeded, small dice
2 TBSP Garlic, minced
2 cups Black beans, soaked and rinsed
¼ cup Cumin, ground
1 TBSP Dry Mustard
2 tsp Cayenne Pepper
Pinch Taste S & P
½ cup Tomatoes
2 cups Chicken Stock
As needed Bread Crumbs
Saute diced Bacon over medium heat until crispy. Add veggies and sauté until tender.
Add Beans. Add Spices stir thoroughly. Add Tomatoes, Stock and cook until Beans are soft. Process with vertical blender. Add Bread Crumbs to proper consistency. Season to taste.
Spread on sheet tray in thin layer, allow to cool.
